OVERVIEW

Umami is the now renowned “fifth taste” - the taste of the amino acid glutamate and which Clearspring describes as a concept but which has been found to be detected by specific taste receptors in our mouths, so it must be a real thing! Clearspring have created two condiments based on fermented rice and soya sauce, to which is added fresh ginger or fresh chilli to become Umami Pastes.
